How to make curly pie with jam:

Melt margarine or butter in a water bath. Let's cool it down. We put the oven to warm up to 200 degrees.

Pour sugar into a bowl, pour melted butter, vanillin into it, break eggs and mix everything thoroughly.

Mix wheat flour with baking powder and begin to gradually introduce it into the mass obtained in the bowl.

Knead the dough and divide it into two unequal parts. Put the part that will be smaller for an hour in the freezer.

Now spread the second part evenly on a baking sheet and put a layer of jam on top. Flatten it gently with a spoon.

After that, we take out the second part of the dough from the freezer and rub it through a coarse grater into jams. Put the tray in the oven for 20 minutes.

After the time has elapsed, we take out the shortbread pie from the oven and serve it warm to the table.

Good day to you! Today I want to bring to your attention a very tasty and very simple pie, which is done very quickly and at the same time inexpensive ingredients are used to prepare it. And if, for example, you need to quickly prepare something for tea, for the unexpected arrival of guests and at the same time surprise and delight them with delicious home-made pastries, then this shortbread pie can be just such a treat-delicacy that will cope with this task.

So, if I intrigued you, then we can start making a pie called "Curly" or "Curly", as you like. I have met various interpretations of this name, but the essence and taste of this does not change. And to make this pie:

1. First of all, you need to prepare the most common shortcrust pastry and for this:

a) two chicken eggs and all finely chopped margarine (margarine, of course, I used margarine here for even greater savings, although the pie still turns out very tasty with it, but if you cook this pie in butter, then its taste becomes generally just great , to say the least), put in a cup where we will prepare our shortcrust pastry


b) add granulated sugar, one teaspoon of baking powder to these ingredients (if someone does not have one at hand, then you can add tea soda slaked with vinegar - this, in principle, is baking powder for dough)


c) add more vanillin there and mix all the ingredients thoroughly.


d) then add wheat flour to this mixture and knead the usual shortcrust pastry. It should be soft and quite elastic to the touch.


2. After we need to divide this resulting dough into two unequal parts. one of which (which is smaller) is put in the freezer to harden, so that it would be easier to grate - we will need it to prepare those very "curls".


3. The remaining most of the dough will need to be rolled out with a rolling pin into a thin layer in the shape of a sheet on which we will bake the cake and pierce it in many places with a fork so that the dough does not warp during baking. Yes, it is best to roll out on parchment paper for baking, since the dough after cooking will be easy to separate from it and transfer it to a sheet on this paper much easier. After you need to dry this part of the dough in the oven for ten minutes at a temperature of one hundred and eighty degrees and then cool it.


4. On top of this dried dough, lay out the jam, whichever you like best. I used blackcurrant jam for this cake. Yes, the jam should be thick, such as in my recipe Cupcake "Berry basket" - "Berry baskets" are very similar to store-bought ones, differing only in shape. If you do not cook jam in this way, then before laying out the jam, mix it with starch until thick. This is necessary so that the jam does not spread during cooking.


5. Well, now you need to grated dough on a coarse grater, previously cooled and slightly hardened in the freezer, sprinkle this jam on top. We bake our cake in the oven at a temperature of one hundred and eighty degrees for twenty minutes until fully cooked.


6. During this time, prepare the topping by mixing ground orange zest, ground cinnamon and powdered sugar, which we will sprinkle on top of our cake after baking is finished.


7. You can also decorate the cake on top with fresh or canned berries (which are available), and, cutting it into portions, serve with tea or coffee at the table.

The recipe for this grated pie (aka curly biscuits) has been in my cookbook for a long time - time-tested and it turns out perfectly. Someone calls this pie "grated", someone - curly biscuits. In my opinion, both names are suitable. Considering that the cake is cut into rhombuses and a piece product is obtained, this is a cookie. On the other hand, it is baked like a pie - on a baking sheet. So let's not talk about the name for a long time, but go directly to the recipe.

To prepare a grated pie (or curly biscuits), we need

  • Margarine or butter - 200 g (1 pack)
  • Sugar - 1 cup
  • Egg - 2 pcs.
  • Baking powder for dough - 1 teaspoon
  • Salt - 0.5 tsp without top
  • Flour - 3-3.5 cups
  • Jam for the filling (currant, cherry, apricot, etc.) - 6-7 tbsp. spoons

How to make shredded pie (or curly biscuits) step by step

  1. Get margarine or butter in advance and let stand at room temperature so that it becomes soft. Beat margarine with sugar (I use a food processor), then add eggs, salt and baking powder. I also add a pinch of vanilla.
  2. After that, gradually add flour. Once the dough is firm enough, continue kneading with your hands. It should turn out cool, but at the same time homogeneous and oily.
  3. When the dough is ready, we divide it in half into 2 parts: send one to the freezer for an hour, and wrap the other in cling film or a bag and let it stand.
  4. Next, we roll out the part of the dough that was warm along the entire length of the baking sheet, sprinkled with flour in an even thin layer. Spread jam over the entire surface of the dough on top. I use currant jam, as I like it the most in taste. Cherry, apricot and any other will be no worse. You can use both jams and jams.
  5. Now it's time to turn our cake into a shredded one and our cookies into a curly one. To do this, we take the frozen part of the dough and rub it on a coarse grater right on top of the jam layer.
  6. We heat the oven to 200 ° C and send our grated pie (or curly cookies) to bake for 30 minutes.
  7. When the cake is ready, you will know right away, because its curls will turn golden, and a wonderful aroma will soar in the kitchen. Here is our grated pie (or curly biscuit) and ready!
  8. It remains to cut it into diamonds - first with diagonal cuts 5-7 cm wide in one direction, and then these strips of the same width in the other direction. Before serving, the resulting pieces of grated pie (or curly cookies) must be cooled and sprinkled with powdered sugar (optional).

  • butter - 210 g;
  • baking powder or soda quenched with vinegar - 10 g;

  • jam - 260 g.
  1. Butter must be taken out of the refrigerator a couple of hours before the intended preparation of the pie so that it softens properly.
  2. Put the product in a bowl, add sugar, beat in eggs and mix the ingredients with a spoon, spatula, or ideally with a mixer.
  3. Mix in the resulting mass of vanillin and baking powder. The latter can be replaced with soda quenched with vinegar.
  4. Now it's time for the pain. We select half of the glass from the total amount, and sift the rest into the dough and knead.
  5. We distribute two-thirds of the dough on a sheet of parchment on a baking sheet or in a form with a layer about one and a half centimeters thick.
  6. Mix the rest of the dough with the left flour and place in the freezer for about thirty minutes.
  7. Spread the jam on top of the rolled dough, level it and crush it with chilled dough grated on a coarse grater.
  8. It remains only to bake the cake in an oven heated to 205 degrees for twenty-five minutes, cut it into portions and serve after cooling.

Curly pie - recipe with margarine

Baking on margarine always turns out somewhat denser and not as crumbly as on butter. But this is exactly what attracts many in desserts. Curly pie with jam on margarine is absolutely not inferior in taste to the previous analogue and succeeds well.

  • sifted wheat flour - 420 g;
  • selected chicken egg - 1 pc.;
  • sugar sand - 70 g;
  • margarine - 220 g;
  • baking powder - 5 g;
  • vanillin - a pinch;
  • chopped nuts - a handful;
  • jam - 180 g.
  1. To prepare the dough in this case, grind the chilled margarine through a grater and mix with the egg and sugar.
  2. We also add vanillin and baking powder, add the sifted flour and knead the dough.
  3. One third of the resulting flour lump is placed in a bag in the freezer, and the remaining portion is distributed along the bottom of the form lined with parchment.
  4. We spread the jam on top of the dough, sprinkle it with nuts and crush it with chips from the dough chilled in the freezer.
  5. To bake, place the cake in an oven preheated to 205 degrees for twenty minutes, then cut into portions and let cool.

Curly pie with jam and meringue

A layer of the most delicate meringue will give the baking a special zest. The taste of curly pie becomes even more fantastic and unforgettable.

  • sifted wheat flour - 260 g;
  • yolks - 3 pcs.;
  • sugar sand - 70 g;
  • margarine or butter - 160 g;
  • baking powder - 10 g;
  • vanillin - a pinch;
  • squirrels - 3 pcs.;
  • lemon juice - 5 drops;
  • powdered sugar - 70 g;
  • vanilla sugar - 20 g;
  • vegetable oil - 20 ml;
  • dry vanilla pudding - 25 g;
  • apple jam - to taste.
  1. Mix butter or margarine, sugar, vanillin and baking powder with flour until crumbs are obtained, after which we add the yolks and knead a loose dough.
  2. We collect the dough in a lump, put it in a bag and send it for thirty minutes in the refrigerator.
  3. After the lapse of time, we distribute two-thirds of the dough in an even layer along the bottom of the mold, prick with a fork and place for fifteen to twenty minutes in an oven preheated to 180 degrees.
  4. We take out the form with the half-finished cake from the oven and let it cool.
  5. In the meantime, beat the whites with lemon juice to peaks, add the powder, pudding and vanilla sugar in parts and beat a little more.
  6. Now gently stir in the vegetable oil without aroma into the whipped mass.
  7. We spread the resulting meringue in a form on a shortbread cake, smeared with apple jam and crush everything with the grated remaining dough.
  8. We send the cake for thirty minutes in an oven preheated to 185 degrees.
