Curly pie is a real find for experienced housewives and for those who have just begun to learn the basics of home cooking. It has a huge number of undeniable advantages. Firstly, it is simply impossible to spoil such a dough. Even a slight deviation from the recipe and the use of proportions "by eye" do not cause tangible damage. Curly pie with jam is always obtained. Secondly, it is stored for quite a long time without getting stale. It is convenient to take it on a long trip and for a walk. And the variety of toppings that are ideal for this dessert opens up a huge scope for improvisation. You can cook this delicacy in a new way every time, using the same recipe.

If you have never made a curly pie with jam, a recipe with a photo step by step (in the oven) will help you understand all the nuances of the process. For the first time, try to strictly follow all the recommendations, measure the indicated amount of products. In the future, you will confidently cook this treat without even looking at the cookbook. And the result will invariably delight you and your guests.

Products for the test

Try to keep all components at the same temperature. Just take them out of the fridge in advance and leave them on the table for a while. Curly pie is made with simple ingredients. You will need:

  • Egg - 1 pc.
  • Baker's margarine - 200 g.
  • Sugar sand - 200 g.
  • Soda - a pinch on the tip of a teaspoon.
  • Flour - 600 g.
  • Vanillin - 0.5 tsp

You can also use butter. But this does not affect the taste and plasticity of the dough. Margarine is cheaper than natural butter. However, some do not eat this product for any reason. If you think oil is a better option, feel free to use it for the test. The proportions of the products in this case are the same.

Preparing a simple dough

Mix the egg and sugar in a bowl, beating lightly. Add melted margarine, mix thoroughly. The mass will look like a suspension of small flakes. Add vanilla and soda, and then add flour in portions, stirring constantly. Very quickly, the dough will begin to easily gather into a lump, which will be well kneaded by hands. Knead it, wrap it in cling film and refrigerate for 30 minutes.

chopped dough

You can cook the dough a little differently. Margarine or butter must be kept in the freezer. When the fat base is frozen, grate it into a bowl of flour. Then add the egg, sugar, and the rest of the ingredients. The finished dough also needs to be kept in the refrigerator for half an hour before starting to form a grated pie with jam. A recipe with a photo will help you figure out how the process is going on.

The most common option is jam from berries and fruits. It is better to use thick so that it does not spread. But if you took a form with a small side, absolutely any of your favorite jams will do. In summer, fresh fruit can also be used to fill the curly pie. But it is better to pre-boil them in sugar syrup or caramelize - so the cake will turn out tastier. This dough goes perfectly with jam.

Pie shaping

The indicated amount of products is enough for a curly pie of a rather impressive size. Prepare the form. It must be clean and dry. Many housewives who have tried the recipe advise not to lubricate it with any fat, because there is already enough butter or margarine in the dough. Divide the chilled lump into two equal parts. Immediately put one of them back in the refrigerator, and form a cake from the second. Smooth it out until you stretch it to the desired size. You can use a rock. Spread the dough over the form, trying to form even sides. Trim off the excess to get a straight edge. The cut pieces are good too.

You can pierce the dough with a fork in several places so that the cake does not swell. Distribute the jam. The filling layer should be about 0.5 cm. If you are using jam or jam with a lot of syrup, sprinkle the surface with starch - you will need about a tablespoon. Take out the rest of the dough and form the top curly cake.

Why is the cake curly?

As you might guess, the top of the pie gave it its name. There are many ways to decorate this pastry. If you want to do everything quickly, just tear the dough into small pieces and spread over the surface. Kitchen utensils can help form a beautiful curly jam tart.

A step-by-step recipe with a photo demonstrates that you can use a regular coarse grater. Frozen dough is perfectly rubbed with even strips. Let them fall on the surface randomly, do not crush from above, then you will get very effective “curls”. Another beautiful, but more time-consuming method involves the use of a meat grinder. Turn the dough, and the resulting "pasta" evenly scatter on the surface of the jam. It remains to preheat the oven to 180 ° C and bake our curly pie with jam until cooked.

A recipe with a photo will help you understand the intricacies of the process. And you will quickly master this simple, but very tasty dish.

The recipe for this grated pie (aka curly biscuits) has been in my cookbook for a long time - time-tested and it turns out perfectly. Someone calls this pie "grated", someone - curly biscuits. In my opinion, both names are suitable. Considering that the cake is cut into rhombuses and a piece product is obtained, this is a cookie. On the other hand, it is baked like a pie - on a baking sheet. So let's not talk about the name for a long time, but go directly to the recipe.

To prepare a grated pie (or curly biscuits), we need

  • Margarine or butter - 200 g (1 pack)
  • Sugar - 1 cup
  • Egg - 2 pcs.
  • Baking powder for dough - 1 teaspoon
  • Salt - 0.5 tsp without top
  • Flour - 3-3.5 cups
  • Jam for the filling (currant, cherry, apricot, etc.) - 6-7 tbsp. spoons

How to make shredded pie (or curly biscuits) step by step

  1. Get margarine or butter in advance and let stand at room temperature so that it becomes soft. Beat margarine with sugar (I use a food processor), then add eggs, salt and baking powder. I also add a pinch of vanilla.
  2. After that, gradually add flour. Once the dough is firm enough, continue kneading with your hands. It should turn out cool, but at the same time homogeneous and oily.
  3. When the dough is ready, we divide it in half into 2 parts: send one to the freezer for an hour, and wrap the other in cling film or a bag and let it stand.
  4. Next, we roll out the part of the dough that was warm along the entire length of the baking sheet, sprinkled with flour in an even thin layer. Spread jam over the entire surface of the dough on top. I use currant jam, as I like it the most in taste. Cherry, apricot and any other will be no worse. You can use both jams and jams.
  5. Now it's time to turn our cake into a shredded one and our cookies into a curly one. To do this, we take the frozen part of the dough and rub it on a coarse grater right on top of the jam layer.
  6. We heat the oven to 200 ° C and send our grated pie (or curly cookies) to bake for 30 minutes.
  7. When the cake is ready, you will know right away, because its curls will turn golden, and a wonderful aroma will soar in the kitchen. Here is our grated pie (or curly biscuit) and ready!
  8. It remains to cut it into diamonds - first with diagonal cuts 5-7 cm wide in one direction, and then these strips of the same width in the other direction. Before serving, the resulting pieces of grated pie (or curly cookies) must be cooled and sprinkled with powdered sugar (optional).

Enjoy your tea, although personally I really like grated pie (or curly biscuits) with milk 😉

Option 1: Classic Curly Pie Recipe with Jam

Grated pie is a delicacy familiar to many of us since childhood. It was prepared even in the most difficult times from jam stored in the pantry. Delicate and crumbly dough is ideally combined with a variety of berries and fruits. The bread is delicious and very flavorful. Usually the cake was cut into small squares, they could be eaten like cookies.

Ingredients:

  • Flour - 600 g;
  • 2 eggs;
  • Sugar - 200 g;
  • Butter - 200 g;
  • Jam - 250 g;
  • Soda or baking powder.

Step-by-step recipe for Curly Pie with Jam

Melt the butter in a water bath or microwave. Instead of this product, you can take margarine, this will not significantly affect the taste. But high-quality butter is much healthier for the body.

Pour sugar into a large bowl, add a pinch of salt and a little vanillin if desired. Beat in two eggs there, mix all the ingredients thoroughly.

When the melted butter has cooled a little, combine it with beaten eggs and sugar. Stir again with a whisk, you can use a mixer.

Mix the sifted flour with soda or baking powder. Gradually pour the resulting mixture into a bowl with butter and eggs, remembering to mix.

When the dough becomes homogeneous, cut it into two parts, one of which will be larger than the other. Send a small piece to the freezer for an hour. Leave most of the dough in the refrigerator.

Open a jar of thick jam. The most delicious pie is obtained with berry jam - currant, blueberry, raspberry or strawberry. Make sure that there is not too much liquid in the jar, otherwise the cake will lose its shape.

Grease a mold with olive oil or line it with parchment paper. Put most of the dough on top, level, make sides. You can use a rolling pin for this, but the shortbread dough kneads well without it.

Turn on the oven at 200°. In parallel with this, spread the filling on the bottom of the dough. Then grate the second piece on top, which has been in the freezer up to this point. Spread the crumbs evenly over the pie. Bake until golden brown, usually 30-40 minutes.

In order for the cake to turn out delicious, it is necessary to approach the choice of ingredients with all responsibility. The taste of butter (margarine) will be felt in the dough, so buy only the highest quality products. There should not be too much gluten in the flour, otherwise the baking may turn out to be harsh. If not enough sugar is added to the dough, it will not be as crumbly as it should be.

Option 2: Quick Recipe for Curly Pie with Jam

The dough for this delicious pie can be prepared quickly thanks to sour cream. You will only need to freeze a small portion for the crumble, which should take no more than 20 minutes. Try this recipe with peach or apricot jam.

Ingredients:

  • Oil - 100 g;
  • Two eggs;
  • Baking powder;
  • Sour cream - 30 g;
  • Jam - 70 g;
  • Flour - 400 g;
  • Sugar - 100 g.

How to quickly cook a pie "Curly" with jam

Cut the butter into small cubes. Beat the eggs with a whisk, gradually adding sugar.

Sift the flour. Combine it with beaten eggs, add sour cream and soft butter. Mix well, the dough should be liquid and homogeneous. Add baking powder.

Separate a small part of the dough, send it to the freezer for 20-30 minutes. At this time, you can already preheat the oven to 180 °.

Pour half of the batter into the greased pan. Spread the jam on top of it, you can sprinkle the filling with cinnamon. Pour in the remaining batter.

Grate the frozen dough, sprinkle the pie with crumbs. Send to the oven for half an hour.

Remember that the cake must cool, only after that you can take it out of the mold and cut it. Shortbread dough must be kneaded very quickly, otherwise it will begin to crumble. It is also important to keep the temperature in the kitchen within 20 °.

Option 3: "Curly" pie with jam and berries

This recipe differs from the others in that not only jam is added to the filling, but also fresh or frozen berries. Thanks to this, the taste becomes more saturated, it reminds of carefree summer days. The dough is twisted through a meat grinder to make the “curls” of the pie even prettier.

Ingredients:

  • Butter - 250 g;
  • 2 eggs;
  • Sour cream - 20 g;
  • Sugar - 100 g;
  • Flour - 600 g;
  • A pinch of salt, baking powder;
  • Strawberry jam - 100 g;
  • Berries, powdered sugar.

Step by step recipe

Whisk eggs with sugar. Add a pinch of salt, sour cream and softened butter to them.

Continue to mix the dough with the mixer. Add baking powder or quenched soda to the mixture.

Pour the sifted flour to the rest of the ingredients, knead the dough with your hands or with a mixer. Transfer it to a floured board and knead well. Divide into two unequal parts.

Transfer a large piece of dough to a greased baking sheet. Spread jam and fresh berries on top. Twist the rest of the dough through a meat grinder without a knife, put it on top of the filling.

Lubricate the cake with milk, sprinkle with powdered sugar. Send to the oven for half an hour to bake at 180 °.

The tastiest is a pie with several types of berries. For example, use strawberry jam and fresh raspberries or red currants for the filling. Sour and sweet berries are especially well combined.

Option 4: Pie "Curly" with jam and peanuts

This recipe uses minimal sugar. Thanks to peanuts, baking becomes not only tasty, but also healthy.

Ingredients:

  • Flour - 200 g;
  • Peanuts - 70 g;
  • Jam - 80 g;
  • Margarine - 150 g;
  • Sugar - 20 g;
  • Salt, baking powder.

How to cook

Mix flour, sugar, salt and baking powder. Pour all ingredients into a blender bowl.

Chop the margarine into pieces, add it to the flour. Knead the dough with a blender.

Take the dough out of the bowl and continue kneading it with your hands.

Line a baking sheet with baking parchment. Spread 2/3 of the dough on top, generously brush with jam.

Grind peeled peanuts in a blender. Sprinkle the base for the cake with it, rub a small part of the dough on top. Bake for 35 minutes at 180°. Hot cake can be cut into squares to make original cookies.

Instead of peanuts, you can use almonds, hazelnuts or walnuts. Sometimes they are mixed with each other to obtain the original taste and texture of the filling. For even more flavor, add some vanilla, cinnamon, and lemon zest to the batter.

Option 5: Cake-pie "Curly" with chocolate and jam

In a deep bowl, grind margarine with flour into crumbs. Extinguish the soda, add it to the resulting mixture. Pour the yolks there, mix gently.

Divide the dough into three parts, add cocoa to one of them. Put all blanks in the refrigerator.

Beat egg whites with sugar using a mixer. Turn on the oven to 190 degrees.

Place one piece of white dough on the bottom of a greased baking sheet. Form small borders. Put currant jam on the cake.

Grate the remaining two parts of the dough. Put the chocolate chips on the jam, grease with whipped proteins. Sprinkle light-colored “curls” on top. Bake the pie for an hour.
