This cherry pie is so simple that even a novice housewife can easily cook it, and it always turns out very tasty. The beauty of the recipe is that you can use not only cherries, but also any berries or fruits, and fresh rather than frozen is better.

I recently posted a shortbread recipe. It is also prepared quite simply and also very tasty, but completely different than the one that we will cook today.

Ingredients:

  • 500 g fresh cherries
  • 180 g sugar
  • 150 g butter
  • a pinch of salt
  • 4 large eggs
  • 200 g flour
  • 1 tsp without baking powder
  • vanillin

Cooking:

First, wash the cherry and remove the seeds from it. If there is no special device, it is convenient and easy to do this with an ordinary safety pin.

Softened butter and 180 g Sahara mix with a mixer at low speed. Take the smallest sugar, and butter is one that melts easily at room temperature.

Add a pinch of salt and add the eggs one at a time, mixing well after each addition.

When all the eggs were introduced, we got this mixture:

Sift 200 g of flour into a bowl, add a teaspoon without a slide of baking powder and vanillin at the tip of a teaspoon. If there is no vanilla, you can add a tablespoon of vanilla sugar. Then add the flour bit by bitin egg-butter mixtureand mix the dough until smooth. The consistency of the dough for a cherry pie is thicker than for pancakes.

Now is the time to turn on the oven and preheat it to 180 degrees.
We take a detachable form, grease the bottom and sides with vegetable or butter and sprinkle with semolina (2 tsp) so that the finished cherry pie can be easily removed from the mold. A shape with a diameter of 24 cm is ideal, but you can take both 22 cm and 26, just the cooking time will change - the higher the cake, the longer it takes to cook.

Pour the dough into the mold and lay the cherry on top, slightly pressing it into the dough. If juice has accumulated in a bowl with cherries, drain it, excess liquid in the pie is not needed.

Sprinkle 1-2 tbsp on top. l. sugar depending on how sour the cherry is. We put the form in the oven and bake for 40-45 minutes. With a mold size of 22 cm, the cake can be baked for an hour, and with a size of 26 cm - 30-35 minutes. In general, watch yourself. We check the readiness with a wooden stick or a thin knife - if there is no batter left on them, the cherry pie is ready.

If the cake is already browned enough, but the inside is still raw, lower the temperature to 150 degrees, then it will reach inside and not burn.

In general, the finished cherry pie should look something like this, during baking it doubles in size.

Sprinkle the completely cooled cake with powdered sugar.

Simple Cherry Pie - General Cooking Principles

For the pie, we prepare a simple dough that does not need to be left for several hours in the refrigerator. In its composition, be sure to include flour, sugar and eggs. For a change, we can use kefir, sour milk, sour cream and butter.

Cherries are ripe and fleshy. They need to be thoroughly washed, the bones removed and poured into a colander so that they are freed from water and juice. This will prevent the cake from soaking.

To improve the taste, you can add cinnamon, lemon juice or cherry liqueur. Cherry is not against such a neighborhood. Roll the berries in sugar, starch, or send them to the pie in their natural form and sprinkle with a sweet ingredient on top.

We bake the cake in a mold, which is well greased with butter. You can line the bottom with baking paper.

The dish is prepared for no more than half an hour at a standard temperature of 180 degrees.

In the process of cooking, you should have a mixer, a rolling pin, a sharp knife, several deep bowls, spoons and a whisk at hand.

Recipe 1. Simple Homemade Cherry Pie

0.4 kg pitted cherries;

L. tea baking powder;

A bag of vanilla sugar;

Third l. tea salt.

Break three eggs into a deep bowl, add half the sugar and beat.

Add vanilla sugar, salt, baking powder and sour cream. Using a whisk, mix everything well.

We add flour little by little. Let's make a light dough.

Grease the mold with oil. 2/3 of the test is conveniently placed on its bottom.

Spread half of the cherries on top and sprinkle them with 1/2 of the remaining sugar.

Roll out the dough and cover the fruit with it. Be sure to pinch the edges.

Beat the last egg together with the remaining sugar and pour over the cake.

We bake the dish at 200 degrees for about forty minutes.

Recipe 2. A simple cherry pie "Gift for Mom"

One teaspoon of cinnamon;

Five gr. baking powder;

We drive the eggs into a deep container, add sugar and beat for about one minute.

Add half the flour, cinnamon and baking powder. Beat the mixture and gradually add the rest of the flour. The result is not very thick, but not liquid dough.

Pour it into the prepared mold and spread evenly over the entire surface.

Lay cherries on top. You can arrange them in circles. Since the dough is watery, all the cherries are a little buried in it.

Cook the cake for thirty minutes at standard temperature.

Recipe 3. A simple kefir cherry pie

0.2 kg pitted cherries;

1.5 l. tea baking powder;

Two table l. powdered sugar.

Beat sugar and eggs in a deep bowl until small bubbles appear. They will help the cake rise.

We add kefir. Whisk in the egg-milk mixture.

Combine flour and baking powder in a sieve. Gradually sift the dry ingredients into the egg mixture and mix with a whisk. It turns out the dough, like pancakes.

Pour it into a mold. Arrange cherries on top. Sprinkle them with half of the powdered sugar.

Bake the cake at standard temperature for about half an hour. Sprinkle the rest of the sweet powder on top.

Recipe 4. Simple Cherry Pie "Quick and Delicious"

An incomplete glass of sugar and flour;

One tea l. soda;

Half a teaspoon salt;

One l. table starch;

100 gr. sunflower oil;

Two l. table vinegar (6%).

Pour all dry ingredients - sugar, flour, soda and salt into a large bowl. Mix everything well with a whisk.

In another bowl, combine milk, sunflower oil and vinegar.

Pour dry ingredients into liquid ones and stir everything until a homogeneous and watery dough is obtained.

Pour starch into a bowl with cherries and mix.

Pour about half of the dough into a baking dish.

Arrange the cherries in an even layer on top.

Pour the berries with the second half of the dough. We bake a simple cherry pie in a preheated oven in the standard way.

Recipe 5. Simple French Cherry Pie

10 gr. butter;

0.1 kg of flour and sugar;

One and a half tea liters. baking powder;

One l. including vanilla extract;

30 ml cherry liqueur;

30 gr. almond petals;

Break the eggs into a deep bowl. Add flour, baking powder, sugar and vanilla extract.

Pour in milk, liquor, put softened butter and beat everything with a mixer until a homogeneous mixture is obtained, resembling pancake dough.

Put the cherries in a silicone mold and pour the dough on top. Sprinkle with almond flakes.

We cook the cake for at least half an hour (200 degrees).

The pie is usually served warm. But it is no less tasty and appetizing and cold.

Recipe 6. A simple cherry pie with sour milk

Six cups of flour;

Two cups of sugar;

Three cups of sour milk;

Two spoons of tea soda;

One spoon st. starch;

If the milk was not used on time and turned sour, it does not matter! It can be successfully used to bake a simple cherry pie.

Pour the sifted flour into a large bowl, beat in the eggs and add the sugar and salt.

Put soda in sour milk and mix. Pour it into a bowl with flour.

Thoroughly stir the ingredients. We get a soft and slightly liquid dough.

Pour it onto a baking sheet and smooth it out evenly.

Sprinkle the cherries with starch, mix and send to a colander. When excess juice drains, transfer it to the dough.

We bake the cake in the usual way.

Recipe 7. Simple cherry pie "Mom's gift"

200 gr. butter;

Two cups of flour;

Three pinches of vanillin;

Art. l. sugar + half a glass;

Three l. table water;

Two l. tablespoons of milk;

One l. table starch.

Cut the chilled butter into four pieces and rub on a grater.

Pour vanilla, salt and a tablespoon of sugar into the flour. Mix thoroughly.

Combine dry ingredients with oil. Mix everything with a spoon.

Add water and stir again.

Further preparation of the dough will be carried out on the table. Sprinkle it with flour.

Knead the dough until it becomes pliable and soft.

Let's separate the third part from it. We wrap both pieces in cling film and send them to the freezer. Let them lie there until we prepare the filling.

Pour cherries with sugar (half a cup) and squeeze lemon juice. Then we mix everything.

In a small saucepan, dilute the starch with water and pour over the cherries. Add milk. Heat the cherry mixture, but do not bring to a boil.

Roll out a piece of dough, the one that is bigger. We spread it on the mold so that there are sides. Pierce with a fork in several places.

Pour the cherry filling inside the future pie.

Roll out the second piece of dough. Cut it into strips two centimeters thick.

Cover the pie up and down. It turns out nice squares from pieces of dough.

We lower the sides down and pinch them with stripes.

We shake the yolk and grease the top of the baking.

After about forty minutes, you can enjoy a fragrant and fragrant simple cherry pie.

Recipe 8. Simple Cherry Pie "Sweet Dessert with Sourness"

100 gr. flour and butter;

Two cups of cherries;

Half a teaspoon salt;

One teaspoon of baking powder;

Break the eggs into a small plate, salt and lightly shake them with a fork.

Add two tablespoons of flour and egg mixture to the mixer bowl. Whip for two minutes.

Pour vanilla and baking powder into the remaining flour. Let's mix.

We send half of the flour to the mixer and beat lightly. Repeat the procedure with the remaining flour. The dough, resembling thick sour cream in consistency, is ready.

Pour it into a mold.

Lay cherries on top of dough. Press it down a little with your hands.

We send the cake to the oven and bake for about half an hour at normal oven temperature.

Recipe 10. A simple pie with cherries and nuts

0.200 kg butter (soft);

A glass of natural yogurt;

L. tea soda slaked;

A glass of walnuts;

Half a glass of sugar + four tablespoons;

In the sifted flour, poured into a deep plate, add slaked soda and salt. We mix.

We put the butter and grind it well with flour.

Pour in the yogurt and knead a soft and cool dough. We divide it into two pieces and send it to the refrigerator.

In a blender, grind the nuts together with sugar (half a glass).

Separate the protein from the yolk, pour in the cinnamon and stir a little with a spoon.

Add chopped nuts with sugar and mix everything.

Roll out one piece of dough and cut into strips seven or eight centimeters wide.

Place a cherry on each. Sprinkle generously with sugar. We wrap the dough in the form of sausages and place on the mold.

We roll out the second piece of dough, cut it into the same strips and fill them with a nut mixture. Roll into sausages and put into a mold.

The cake is cooked at normal temperature for about forty minutes.

Easy Cherry Pie - Tricks and Helpful Tips

  • Do not be lazy and use wholemeal flour. This will significantly worsen the cake, making it thin and "thin".
  • If the dough is naughty, constantly sticks to your hands, then you need to sprinkle it with flour.
  • In order for the cake to rise during baking and at the same time be dry, its bottom layer needs to be slightly sprinkled with starch. Then the filling is laid out on top.
  • The dough is sticky and soft, easy to roll out if covered with baking paper. You can use a bottle instead of a rolling pin by filling it with cold water.

I have long noticed: the simpler the cake, the tastier it is. This is the most delicious cherry pie I've ever had. And the easiest. It can be baked from fresh cherries (just don't forget to remove the pits!), or from ice cream. Cherries practically do not lose their taste and aroma when frozen. Be sure to add vanilla to the dough. The combination with cherries is simply wonderful. Some such purely confectionery is very correct. It also creates a cozy feeling in the house where this simple cherry pie is baked.

  • 90 g butter,
  • 130 g sugar

  • 1 teaspoon baking powder
  • a packet of vanilla sugar or one vanilla pod

How to make cherry pie

One of the features of this pie is that there are too many berries and too little dough. However, in the process of baking, a wonderful transformation occurs - the dough rises very much, therefore, in the finished pie, the dough and cherries are combined quite harmoniously.

Whip room temperature butter and sugar with a mixer until fluffy. If the oil comes out in lumps, it doesn't matter. The taste of the cake will not be affected by this.


Add two eggs one at a time to the batter and beat well.

Add flour, baking powder, vanilla sugar or seeds from one vanilla pod. Knead the dough at low speed mixer.


We spread the dough for the cherry pie in a detachable form.


We are not afraid that there is not enough dough, but there are a lot of berries - the cake will rise well during the baking process, and the cherry will mostly be inside the cake.


Feel free to pour the berries onto the dough and press them with your hands.


We put the cherry pie in the oven, preheated to 180 degrees, for 45-50 minutes.


Cherry pie is ready. Before serving, be sure to sprinkle it with powdered sugar, because there are a lot of cherries in the pie and therefore it may seem sour.


For lovers of cherry pastries, we recommend trying an open cherry pie. It is a little more complicated - the dough will need to be rolled out and then make the sides around the berries. But the taste is also absolutely wonderful. And above all thanks to the test. It turns out crispy and tender at the same time.

This cherry pie is a favorite in my family. I discovered it for myself this summer, when the cherry harvest pleased me and I had to come up with options for using it, except for freezing and. As a result of the experiments, we got a simple and amazingly delicious pie with sour cream filling, which has become our favorite!

  • 100 g butter
  • 100 ml sour cream
  • 50 g sugar
  • 200 g flour

  • 150 ml sour cream
  • 100 g sugar
  • 1.5-2 tbsp. spoons of potato starch (or 2 tablespoons with a slide of premium wheat flour)
  • 1 sachet vanilla sugar (optional)

  1. Leave the butter warm until it becomes soft. Get the rest of the food we need.

    Advice: If you prepare a filling with 1.5 tbsp. spoons of starch, after baking it will drain a little. Therefore, if you want to get a denser consistency of the cake (as in the photo), then you need to put 2 tbsp. spoons of starch. But we prefer the option when the filling is slightly liquid, it turns out like a cream. Lately I have been making it with flour (I put 2 tablespoons), then it is even more tender.

I also make this pie with homemade frozen cherries (before freezing, I take out the seeds and drain the juice) without defrosting it. But if the cherry is juicy, then it is better to defrost and drain the juice first (or you can roll it in starch).

This frozen cherry pie made my day. I prepared it for the arrival of guests and did not miss. The cherry pie turned out to be extremely successful. Beautiful, ruddy, with a lot of incredibly tasty cherries, moderately sweet, in a word - flawless. Thinking about what makes this frozen cherry pie so incredibly tasty, I came to the conclusion that it is mainly the combination of sour cherries and sweet dough. Personally, I really liked the pie.

And I cooked it relatively quickly. This cherry pie does not require any special troubles. The only thing that can cause a slight delay in the preparation of this frozen cherry pie is the bones that should be removed from the frozen cherry (well, the latter, respectively, should be thawed beforehand). Everything else in the recipe is a matter of minutes.

I would also like to say a few words about frozen cherries. Why a pie with such a filling? Now the height of spring and fresh berries are still far away, and in many freezers (just like mine) there are summer stocks of frozen cherries. I usually make enough stocks of cherries to add them to compotes in the winter or make cakes and pies out of them. So, spring is in full swing, and the cherries in the freezer do not end there. And this is a good reason to make such a wonderful cake out of it.

Ingredients:

  • 150 g flour
  • 100 g butter
  • 2 eggs
  • 150 g sugar
  • 1 teaspoon baking powder (no slide)
  • 1 teaspoon vanilla sugar (without a slide)

How to make frozen cherry pie

Butter (100 g) should be taken out of the refrigerator in advance and given time to soften a little. We will work with soft butter, otherwise you simply will not be able to mix the butter with sugar.

So, we combine 100 g of butter and 100 g of sugar (we will leave another 50 g of sugar for later). Using a mixer, mix the ingredients until a more or less homogeneous creamy state.


Add two eggs to the butter and sugar and continue to work with a mixer. The mass will become more liquid.


This is the mass you should end up with after a few minutes from the start of preparing the dough for the frozen cherry pie. But it's still not dough.


Add 150 g of flour, vanilla sugar and baking powder to our mass in a bowl. Let's work with a mixer for about three minutes, as a result of which we will get a fairly thick creamy dough for a pie with frozen cherries.


We take out the baking dish. It is better to take a detachable one (I have 19 cm in diameter). Line the bottom of the mold with a piece of parchment. Then we spread the dough from the bowl into the mold and, using a silicone spatula or just a spoon, distribute the dough evenly over the entire area of ​​\u200b\u200bthe mold.

Set the frozen cherry pie pan aside. It's time to turn on the oven to preheat. Set the temperature to 180 degrees.


While the oven is preheating, let's take care of the frozen cherries. I thawed my cherries in the microwave and then removed the pits. She threw the cherry into a colander and squeezed the juice out of it well with her hands.


We return to the form with the test. We take half of the volume of cherries and evenly distribute it over the surface of the dough. Then gently press the berries with your hand directly into the dough, not deep.

We take the second half of the cherry and lay it on top of the first layer. Sprinkle the remaining sugar on top of the cherry.

We send the form with the pie to the oven for 50 minutes. Times are approximate and will depend on the size of your mold and the properties of your oven. Starting 45 minutes after the start of baking the frozen cherry pie, keep a close eye on it and check for doneness. We bake the cake on the middle rack and preferably in the top-bottom mode.


My frozen cherry pie is ready, as I verified by poking a toothpick through the center and pulling it out completely dry.
