Baking in the microwave

An equally useful kitchen device, but most of us still use it for one single purpose - to warm up cold food. The maximum is to cook hot sandwiches, but no more. Of course, it all depends on the functionality of the device, but even its simplest versions are quite suitable for baking the simplest dishes in them. Cottage cheese casserole without semolina is one of them. Outwardly, of course, it will differ from its counterparts, since there is nowhere to get a golden crust on it, but the taste can really surprise you, because it will remind you more of an airy curd soufflé than the casserole that we used to eat.

Ingredients:

  • Cottage cheese - 1 pack (200-250 grams);
  • Butter - 30 grams;
  • Sugar - 2-3 tablespoons;
  • Starch - 30 grams;
  • Egg - 2 pieces;
  • Salt - a pinch;
  • Vanilla sugar - ½ teaspoon;
  • Lemon - 1 piece.

Cooking method:

  1. Pour boiling water over the lemon and dry well. Remove the zest and squeeze out the juice. When peeling, it is important not to capture the white part of the peel, as it will give bitterness.
  2. Mix 20 grams of butter with sugar and send to melt. It is essential that the sugar is completely melted, because during baking, the crystals can char, thereby completely spoiling the dish.
  3. We drive in the yolks to the slightly cooled oil, pour in the zest, starch, which replaces the cereal in the recipe, and vanilla. Mix everything thoroughly and start introducing mashed cottage cheese. Whisking continuously, add lemon juice.
  4. Beat the cooled proteins with salt and carefully introduce into the dough. The easiest way to do this is with a silicone spatula.
  5. Grease the mold with oil. It is advisable to choose a round microwave for a microwave, because in a rectangular casserole it will cook unevenly, which is fraught with charred corners. Pour the dough into it. From above, you can decorate with nuts or fruits by rubbing the remaining piece of butter there.
  6. It is better to bake under a special lid, but if there is none on the farm, you can simply cover it with parchment or cling film by making several holes.
  7. We set the average power for 4 minutes. We bring to readiness for a couple of minutes at full power, after which we leave it in the microwave for another 5 minutes.

During this time, the casserole will “reach” and be completely ready for serving. You can decorate it with cinnamon, powdered sugar, cocoa powder or just jam or topping.

Very often, people who are on a strict diet try to eliminate gluten-rich foods from their diet. It is not recommended for children either. The black list of such products also includes flour with semolina - products without which it is rather difficult to imagine a curd casserole. However, this does not mean at all that they are not destined to enjoy this dish. For such categories, we present a light version - a casserole without flour and semolina.

Ingredients:

  • Cottage cheese - 250 grams;
  • Sour cream - 1 tablespoon;
  • Egg - 2 pieces;
  • Sugar - 2-3 tablespoons;
  • Starch - 1 tablespoon;
  • Vanillin, raisins - at will and taste.

Cooking method:

  1. Try to choose cottage cheese as fresh as possible, for this dish stale, but not yet spoiled, will not work. Too high fat content is also useless to us, since we add sour cream, but fat-free completely will not give us such airiness. If you have time, then the cottage cheese can be passed through a strainer, in the absence of such, it is enough just to knead it well with a fork.
  2. Then we add sugar to the curd mass and start beating, since we will need to wait for it to completely dissolve, then we fill it up first. In turn, we send sour cream and starch there. We collect tablespoons with a generous slide. The yolks are the last to be sent to the mass. If you decide to use vanilla powder, add it at this stage.
  3. Beat the remaining whites until a thick foam forms. This must be done in a completely dry dish, adding a pinch of salt.
  4. We combine the protein and curd masses, kneading everything until smooth. In principle, you can not fool around with the separation of eggs, and drive them immediately into the cottage cheese, but again, this will make the casserole lose its airiness.
  5. Raisins must be carefully prepared before adding. Since dried fruits are treated with insecticides, they must be doused with boiling water, and then washed again. Thanks to this, they will not only get rid of harmful coating, but will again become soft and juicy. Before adding to the dough, raisins must be dried. You need to add it when all the ingredients are already assembled.
  6. Pour the resulting dough into the prepared form (greased with oil or cooking oil) and send it to the preheated oven. The baking temperature is 180 degrees. Time - 35 minutes.

Do not rush and immediately remove the dessert from the oven. So that the dietary cottage cheese casserole without flour and semolina retains splendor and does not fall off, let it cool right in the oven.

Lean casserole without eggs

Even in the strictest post there are days when you can treat yourself to cottage cheese, but eggs, as a rule, are not included in the diet even then. This product is excluded from the diet of vegetarians, people with an allergy to protein, which begins even in early childhood. But the ban on eggs does not mean the fact that the taboo will apply to all pastries. This product is a great substitute, and we will prove this to you using the example of cottage cheese casserole without eggs and semolina.

Ingredients:

  • Cottage cheese - 200 grams;
  • Flour - 20 grams;
  • Sour cream - 30 ml;
  • Sugar - 40 grams;
  • Raisins - to taste.

Cooking method:

  1. If you have chosen granular cottage cheese, it must be passed through a sieve. So we will give it uniformity and lightness. Mix all ingredients except raisins until smooth.
  2. Scalded with boiling water and dried raisins are added last. Instead, you can use absolutely any dried fruit, or you can make a mix of them, so the taste will turn out to be much more varied and richer.
  3. To add splendor to the dish, you can add a teaspoon of soda to sour cream, which will “fluff up” the casserole.
  4. The dough is baked for about 30 minutes at a temperature of 180 degrees.

If flour is also on the list of taboo foods, you can replace it with crushed oatmeal. According to the same recipe, you can cook cottage cheese casserole without eggs, replacing flour with the same amount of semolina.
