To get fluffy baked goods that will literally melt in your mouth, you often need to set aside a certain amount of time. Most of it goes into the dough, which needs to accumulate the required amount of bubbles to ensure airiness. However, there are also express recipes for fluffy buns, which are much easier to prepare.

How to make cottage cheese buns

When recipes for making any baked goods talk about a 5-minute period, this often acts as a kind of synonym for speed. In fact, it is unlikely that you will be able to bake something in such a short time. Before cooking the product in the oven, microwave or in a frying pan, you will need to knead the ingredients well into a single lump of dough. Curd buns will be no exception.

There are options when yeast dough is used for buns and recipes where yeast is not included in the composition. A delicious tender dish is obtained in both cases. There are also differences in the manufacturing method. Traditionally, pies and rolls are cooked in the oven, which allows them to bake faster and without excessive amounts of oil. However, you can resort to using the microwave or fry the cottage cheese buns like fluff in a frying pan.

5 minutes in the oven

In a confined space at high temperatures, baked goods cook faster and are more tender. Cottage cheese buns in the oven really look like fluff on the inside, and have a soft crust on the outside. In medium-power devices, cooking will take longer, but such recipes are still considered one of the fastest. For baking, it is better to take a baking sheet or deep heat-resistant dish. You will need to grease the bottom with oil or line it with baking paper to prevent the dough from sticking and the finished product from burning.

In a frying pan in 5 minutes

When you don’t have an oven at hand, but want to try a delicious dessert dish, other cooking methods will come to the rescue. Sweet buns in a frying pan are prepared a little differently, and in the end you will get an airy, fluffy delicacy. There are two main differences:

  • Large amount of oil. To get a beautiful crust and curd buns baked inside, you will need to create some kind of deep fat in a frying pan. There will be less oil than when making French fries, but this amount will affect the calorie content of the finished product.
  • The need to track readiness. You will have to not only check whether the crust is browned, but also constantly turn the product to achieve the same result on all sides.

Microwave in 5 minutes

Modern technology is designed to help housewives create culinary masterpieces and significantly save time. In the case of a microwave oven, this is especially noticeable; it may well become an alternative to the oven. The cottage cheese buns are cooked like fluff in 5 minutes at medium power, but they turn out completely baked and soft. The smaller the products, the more of them can fit in a heat-resistant dish, and this will determine the exact cooking time. You can bake two buns in the microwave in a minute, and in five minutes you can get 6-7 fluffy buns.

Bun dough like fluff

The main component of such baking is cottage cheese. It has many useful substances and is considered a dietary product. However, the fluffy curd dough is prepared in 5 minutes with the addition of a large amount of flour, which significantly increases its calorie content. There are dietary variations that replace this ingredient with semolina, which, although it changes the taste, leaves the texture soft. Eggs are a must. Some housewives prefer to beat the yolks and whites separately, while others do not separate them. Yeast can be added to the cottage cheese dough as desired.

Curd buns recipe

The names for most dishes are not chosen randomly. Cottage cheese buns Tender fluffies received this name because of the airy texture they have. However, they take 2.5 hours to prepare due to the fact that the dough needs to brew. There are simpler and faster options where the ingredients are kneaded in a couple of movements, and the texture of the finished product remains just as soft. Recipes can be varied by adding vanillin or raisins.

Buns according to this recipe turn out incredibly airy and tender. You can add dried fruits (dried apricots, raisins) to the main filling, everything is not for everyone, in our case we use cherries. You can make these buns in the form of pies, that is, wrap the cottage cheese inside. We will have an open option.

Ingredients:

For the test:

  • Flour – 310 g
  • Milk – 100 ml
  • Fresh yeast – 10 g
  • Sour cream – 100 g
  • Sugar – 2 tbsp. l.
  • Eggs – 2 pcs.
  • Butter – 50 g
  • Vanilla sugar - to taste
  • Salt - a pinch

For filling:

  • Cottage cheese – 250 g
  • Cherry – 50 g
  • Eggs (yolk) – 1 pc.
  • Sugar – 2 tbsp. l.
  • Sour cream – 1 tbsp. l.
  • Starch or flour - 1 tsp.
  • Vanilla sugar - to taste

Cooking method:

1. Prepare the dough, heat the milk to 36-38 degrees, add yeast and 1 tbsp. l. Sahara. Mix everything and set aside in a warm place to form a cap.

Fresh yeast can be replaced with dry yeast; you will need about 5 g.

2. Beat one egg into a bowl, add sugar, salt, vanilla sugar to it, and then beat a little with a whisk. Simply mix the ingredients.

3. Pour the appropriate dough and sour cream into the prepared mixture.

Try to use fatty sour cream, at least 20%. It can also be replaced with cream or regular milk.

4. Start adding flour in portions and thus knead the dough. We transfer it to the table.

5. Now you need to add very soft butter to the dough. Knead everything until smooth, you should get a soft piece that sticks a little to your hands. Transfer it to a bowl greased with oil, cover with cling film and send to a warm place to rise for 1-2 hours.

Do not add flour during the process, otherwise you will end up with hard, clogged buns.

6. While the dough is infusing, you can prepare the filling, so put all the ingredients necessary for it, except cherries, into a bowl and beat with a blender until smooth and creamy.

If you don’t have a blender, then the cottage cheese must be ground through a sieve and it should not yet be dry.

7. Punch down the suitable workpiece and cover it again with film, set aside for another 30 minutes.

8. So, when the required amount of time has passed, put the dough on the table and make a sausage out of it. We divide it into 8 equal parts.

9. Roll each piece into a ball. We place the preparations on the baking sheet on which we will bake. Cover with a towel or film and leave to proof for 30 minutes.

10. When the buns have arrived, take a glass, grease its bottom with vegetable oil and begin to make indentations in the blanks, simply pressing on them with the glass. If something happens, you can help a little with your hands.

11. Place cherries or whatever you chose into the recesses, and then cover it with the filling, literally 1 tbsp. l. will be sufficient. Brush the edges with beaten egg for a golden brown color. Place a cherry on top, in the middle.

12. Place the buns in the oven for 20-25 minutes at 190 degrees. They should brown and rise.

We take the buns out of the oven and let them cool. In the meantime, make yourself some tea. Bon appetit!

Important! Do not eat hot baked goods - it is harmful to the stomach.

The results are incredibly soft and fluffy buns that simply melt in your mouth. Like the previous delicacy, they cook very quickly, which is good news. If you want, add raisins or dried apricots to the dough.

Ingredients:

  • Cottage cheese – 270 g
  • Flour – 230 g
  • Eggs – 2 pcs.
  • Sugar – 65 g
  • Vegetable oil – 2 tbsp. l.
  • Baking powder – 2 tsp.
  • Vanilla sugar - to taste
  • Salt – ½ tsp.

Cooking method:

1. Take fresh cottage cheese and grind it through a sieve, you should get some kind of curd mass.

Be sure to buy a fatty product.

2. Beat eggs into the fermented milk product, add sugar, vanillin, salt and add vegetable oil. Using a whisk, mix everything thoroughly until smooth.

Vegetable oil can be replaced with butter, the taste will only be better.

3. Pour baking powder into the flour and mix. Sift the flour mixture into the curd mixture. In this way we knead the dough.

4. When it becomes difficult to knead with a spoon, sprinkle the table with flour, place the workpiece on it and continue kneading. The result should be a soft mass that does not stick to your hands.

5. Make a rectangle 1-1.5 cm thick from the dough and divide it into 8 parts.

6. Form each piece into balls. You can roll them on the table or in your hands.

7. Place the preparations on a baking sheet covered with parchment paper. Brush each bun with beaten egg.

8. Send the dish to bake in the oven preheated to 200 degrees, time it for 20-25 minutes.

3 minutes before the end of the timer, you can take out the baked goods and sprinkle with sugar.

Let the finished buns cool and you can start eating them. I recommend serving them with condensed milk or jam.

Beautiful pastries in the shape of roses

I want the finished dish to not only be tasty, but also pleasing to the eye. So, for example, you can beautifully decorate buns with cottage cheese, giving them the image of a rose. In general, why talk too much, let's get started.

Ingredients:

For the test:

  • Flour – 650 g
  • Eggs – 2 pcs.
  • Sugar – 100 g
  • Salt - a pinch
  • Butter – 100 g
  • Milk – 270 ml
  • Yeast (dry) – 8 g
  • Vanilla sugar - to taste

For filling:

  • Cottage cheese – 0.5 kg
  • Sugar – 100 g
  • Vanillin – 1 g
  • Eggs – 1 pc.

Cooking method:

1. Pour the yeast into a bowl and pour warm milk over it, mix everything. While kneading, add all the sugar and then sift in half the flour. This way you will get a dough. Cover the bowl with a bag or cling film and set aside in a warm place for 30 minutes.

2. While the dough is infusing, prepare the pastry; to do this, beat the eggs into the melted butter, add vanilla sugar, salt and beat with a whisk.

The melted butter should be at room temperature, otherwise the eggs will curdle if it is too hot.

3. To prepare the filling, just mix the grated cottage cheese with 1 egg, sugar and vanilla.

4. When the dough has risen, mix it with the baking until smooth.

5. Now all that remains is to add the remaining flour to the mixture and knead the dough, which is, in fact, what we are doing. The dough should be quite stiff.

6. Divide the workpiece into 8 parts and roll each of them into a ball. Place the balls on a baking sheet, cover with a towel and let them stand for 10 minutes.

7. When the pieces have rested, divide each of them in half and roll them into a circle, 2-4 mm thick. We make 3 cuts from the middle, as shown in the photo.

8. Place about 1.5 tsp of filling in the middle of the flatbread and begin to wrap. Just seal each side around the curd. At the end, roll up the bottom of the bun a little.

9. Place the pieces on a baking sheet and brush with beaten yolk. Leave to bake for 20-25 minutes in an oven preheated to 180 degrees.

You can prepare this dish with various fillings, for example, jam or even apples.

A simple recipe for jellied buns in sour cream filling

These are incredibly delicious buns that will amaze everyone in your household. They can also be called shells because they have a spiral shape. We will cook without dough, but if you doubt your yeast, it’s better to make it. What if the food doesn't go to waste?

Ingredients:

For the test:

  • Water – 150 ml
  • Milk – 150 ml
  • Sugar – 2 tbsp. l.
  • Sour cream – 1 tbsp. l.
  • Butter – 75 g
  • Fresh yeast – 40 g
  • Flour – 700-800 g
  • Salt – ½ tsp.

For filling:

  • Curd mass – 500 g

For filling:

  • Sour cream – 300 ml
  • Sugar - to taste

Cooking method:

1. Mix milk and water in a bowl; the liquid must be warm. Add yeast to it and stir until it disperses. Then add sugar, salt, 1 spoon of sour cream, and whisk everything again.

2. Pour melted butter into the main mixture and begin to gradually introduce the flour mixture.

3. Knead the elastic dough for 5-7 minutes. Then sprinkle the bowl with flour, cover with a lid and place in a warm place for 40 minutes until it begins to rise.

Do not be lazy to knead the dough for as long as possible, this will have a beneficial effect on the quality of the finished product.

4. When the workpiece has arrived, knead it a little and send it to rise again for the same time.

5. To fill, mix sour cream and sugar in a bowl.

6. Divide the risen dough into 2 parts. We put one aside for now, and roll the second into a rectangle 5 mm thick.

7. Distribute half of the filling around the entire perimeter and wrap everything in a tight roll.

As you might have guessed, you can make curd mass at home by simply mixing grated cottage cheese with vanilla, sugar and some dried fruits.

8. Cut the roll into portioned pieces, which we then place on a baking sheet and brush with egg yolk. We repeat similar steps with the second half of the test.

9. We send our shells to bake in the oven, preheated to 180 degrees, for 20-25 minutes.

10. While the finished delicacy is still hot, pour sour cream over it. Leave on the counter until completely cool.

Unrealistically soft buns with cottage cheese

“And here we are playing with buns” - this is exactly the association I have with this word. This dish is called cheesecakes in another way, but the essence does not change. In the recipe, you can use both regular cottage cheese and ready-made curd mass, just not the kind that is sold in buckets.

Ingredients:

  • Milk – 100 ml
  • Flour – 3 cups
  • Yeast – 4 g
  • Sugar – 1 glass
  • Eggs – 3 pcs.
  • Cottage cheese – 200 g
  • Sour cream – 100 g
  • Vegetable oil – 2-3 tbsp. l.
  • Vanillin - to taste
  • A pinch of salt

Cooking method:

1. Pour milk into a bowl and add sour cream, 2 egg yolks, half a glass of sugar, yeast, salt, vanillin, vegetable oil. Mix everything thoroughly.

2. Add a glass of flour to the mixture, knead everything again and cover with cling film. Place the dough in a warm place for 40 minutes.

3. After the time has passed, mix the dough and put it back in a warm place for the same time.

4. When the workpiece has come up a second time, we begin to add the remaining flour to it. In this way we knead the dough.

5. Divide the finished base into 9 equal parts. Roll each of them into a ball, placing it on a baking sheet. Cover the pieces with a towel and set aside in a warm place for 50 minutes to proof.

The oven, with the lamp on, provides the most favorable conditions for this process.

6. Meanwhile, prepare the filling. Grind the cottage cheese together with sugar and proteins until smooth.

7. When the rolls have arrived, we make holes in them; for these purposes, it is better to grease your hands with butter. We put our filling into the prepared holes, and then grease everything with beaten egg.

To make holes, you can also use a glass, just grease the bottom with oil and start pressing on the bun to form a recess.

8. Preheat the oven to 200 degrees and place the plushies there. Bake everything for 15-20 minutes until browned.

These are the wonderful cheesecakes we made. Wait until they cool down and you can start tasting. Don’t forget that you can decorate them in some original way, use your imagination.

Quick breakfast buns in 30 minutes without yeast

In the morning, basically, there is no time to prepare various baked goods and pies. This is because getting ready for work takes up most of the time. However, there is a very excellent recipe that we will now look at. Preparing such cottage cheese buns takes very little time, and therefore you can please yourself with a fragrant, fresh breakfast in the morning.

Ingredients:

  • Cottage cheese – 270 g
  • Flour – 260 g
  • Eggs – 2 pcs.
  • Sugar – 60 g
  • Vegetable oil – 2 tbsp. l.
  • Baking powder – 2 tsp.
  • Vanilla sugar - to taste
  • A pinch of salt

Cooking method:

1. Add eggs, sugar, butter, vanilla sugar and salt to the cottage cheese. Using a whisk, whisk everything until smooth. Meanwhile, immediately turn on the oven to preheat to 200 degrees.

The cottage cheese must be paste-like, but if yours is grainy, then puree it with a blender, or grind it through a sieve several times.

2. Pour flour and baking powder into the resulting mixture. Mix the dough. It should be sticky, but not liquid.

3. Place the workpiece on the table, roll it in flour and divide it into 8 equal parts.

4. Make a ball from each piece.

5. Place the formed buns on a baking sheet and brush with beaten yolk. Place them in the oven to bake for 20-25 minutes until golden brown.

So, quickly and without any hassles, we prepared our breakfast. Let's finish eating and go to work 😊

Video recipe for buns with cottage cheese made from puff pastry (prepared for 15 minutes)

I really love puff pastry, especially various puff pastries, both with salty and sweet fillings. And then I came across one of the recipes for the next baking. I recommend purchasing ready-made dough in advance so as not to waste time on it. But if you want to cook it yourself, then cook it, and when you’re finished, immediately sit down and watch the video.

Great, isn't it? You can experiment with the shapes of the puff pastries, and also try making a salty filling from cottage cheese.

My selection has come to an end, but there is still a lot more to come. Finally, I would like to touch a little on the topic of filling. Choose only full-fat cottage cheese, because if it is dry, it will lose all its moisture during baking and you will end up with incredibly dry buns. Or mix a fermented milk product with a small amount of sour cream or milk, this will save the situation.

Add various additives to the filling base, such as raisins, candied fruits, dried apricots, in general, whatever you like.

I say goodbye to you, see you in new articles! Be sure to share recipes with friends.
