Peppers should be taken elastic, if the peppers are a little wilted, it will be more difficult to remove the skin from them. Brush washed and dry peppers with vegetable oil. Bake in the oven at t 180 * until light tan (approximately 20 minutes).


Immerse the peppers in a bowl of cold, salted water (1 tablespoon of salt per liter of water) or steam the roasted peppers in a bag, I like this method better, because with this method, more juice is formed inside the pepper, which we need.


Peel the peppers from the skin and seeds, collect the juice from the peppers in a separate bowl.


To prepare the filling, coarsely chop the dill, peel the garlic, cut the hot pepper in half, free from seeds and cut into pieces. Place everything in a blender bowl, add vegetable oil, vinegar, sugar and salt (I added 1 tsp with a slide) - chop.


Sterilize jars and lids.
We put the stuffing inside each pepper and put it in a jar, pour it with “pepper juice” (strain through a sieve).


Cover with a lid and sterilize in boiling water for 15 minutes from the moment of boiling. Cork the lid, turn the jar upside down and keep under the “fur coat” until it cools completely.

pickled peppers

Ingredients (2×0.5 l):
bell pepper - 1.5 kg (8 pcs.)
water - 1 l
oil - 5 tbsp. l.
vinegar 9% - 125 ml
sugar - 100 g
salt - 1 tbsp. l.
bay leaves - 2 pcs.
allspice peas - 6 pcs.
garlic - 2 cloves

Cooking:

Peel the peppers from seeds, membranes and tails. Cut them into slices 3 cm wide.

Pour water into a saucepan. Add butter, sugar, salt, garlic, peppercorns and bay leaves. Boil.

Put the peppers in the boiling marinade and cook for 10 minutes. Pour the marinated peppers into a sieve. Place the pepper pieces in jars.

Add vinegar to the marinade and stir. Fill them with peppers. Screw the lids on the jars. Turn them upside down, wrap them in a blanket and leave for 12 hours.

Lecho

Ingredients (2×0.5l):
bell pepper - 1 kg (6 pcs.)
tomatoes - 1 kg (10 pcs.)
onion - 1 pc.
carrots - 1 pc.
sugar - 70 g (3 tablespoons)
salt - 1 tsp
oil - 70 ml (4 tablespoons)
vinegar 9% - 70 ml (4 tablespoons)

Cooking:

Sterilize jars and lids.

Pass the tomatoes through a meat grinder.

Grind the tomato mass through a sieve into a saucepan. Put the resulting tomato juice on the fire and boil.

Peel and cut carrots into cubes. Put the carrots in the boiling tomato juice and let it boil for 15 minutes.

Onion cut into half rings.

Peel the pepper, cut into strips 1 cm wide.

Add the onion and pepper to the tomato and carrot mixture.

Add butter, sugar and salt. Stir and reduce heat to low. Boil the mixture and cook for 10 minutes.

Turn off the heat and add vinegar. Stir. Take lecho with a spoon and put it in jars. Pour lecho with marinade. Twist.

Turn the jars over and wrap them in a blanket. Leave for 12 hours.

Roasted Stuffed Peppers

Ingredients:
bell pepper - 3 pcs.
cheese - 130 g
eggs - 2 pcs.
tomatoes - 1 pc.
parsley - 5 sprigs
salt - ¼ tsp
ground black pepper - ½ tsp.
breadcrumbs - 50 g
oil - 1 tbsp. l.
flour - 3 tbsp. l.

Cooking:

Brush the peppers with oil and place on a baking sheet. Put them in the oven at 200 degrees for 20 minutes.

Boil an egg. Grate the cheese on a fine grater.

Cut the tomatoes into 4 parts and cut out the pulp. Cut it into cubes. Finely chop the parsley. Mix cheese, parsley, tomato and chopped boiled egg. Pepper and stir.

Remove the peppers from the oven and submerge them in cold salted water. Remove seeds and skins from peppers. Stuff them with stuffing.

Whisk an egg in a bowl. Dip the stuffed peppers in the beaten egg, roll in the flour, and then dip in the egg again.
