Step-by-step video recipe

Ingredients

  • kefir - 100 milliliters;
  • flour - 500 grams;
  • yeast - 10 grams;
  • milk - 100 milliliters;
  • eggs - 1 piece;
  • sugar - 1 tablespoon;
  • vegetable oil - 6 tablespoons;
  • salt - 1 teaspoon.
  • onion - 1 piece;
  • minced meat - 300 grams.
  • eggs - 1 piece;
  • hard cheese - 100 grams;
  • butter - 30 grams.

Test preparation

In order to bake the Chrysanthemum meat pie, you need to knead the dough. This is done quite simply.

  1. First of all, you should prepare the dough. To do this, you need to mix sugar, yeast, milk, and then put the products in a warm place for fifteen minutes.
  2. Then you need to knead the dough from all the prepared ingredients. The risen dough, kefir, salt, vegetable oil and egg should be mixed into the flour. If the dough sticks too much to your hands, you can add more flour to it.
  3. Now the finished dough should be placed in a cup, covered with cellophane on top and left to rise in a warm place for one hour.

Preparing the filling

Meat pie “Chrysanthemum” cannot do without a delicious filling. In order to cook it, you need to add chopped onion to the minced meat. Then you need to pepper it, add salt and pour in the broth. All ingredients should be mixed thoroughly. The broth can be replaced with plain water mixed with some seasonings. Separately, you need to grate hard cheese on a coarse grater.

How to cook Chrysanthemum meat pie

  1. The baking dough should first be kneaded and divided into pieces. After this, the table must be sprinkled with flour. Then you need to roll out the dough three millimeters thick and cut circles out of it with a glass.
  2. Now you should put a little minced meat and a pinch of cheese in each circle. After this, the dough with the filling needs to be folded in half, like a dumpling, and then folded again. The ends of the product should be pinched so that a petal-like shape is obtained.
  3. Then you need to put greased parchment paper into the pan. After this, the finished petals need to be laid out in a circle as close to each other as possible.
  4. The Chrysanthemum pie with minced meat in the center should be decorated with a rose. In order to mold it, you need to put minced meat on three parts of the circle, and then lay the dough products overlapping each other.
  5. Now the dough with minced meat must be carefully rolled into a roll. You will get a rosette, which will need to be installed in the center of the product.
  6. Next, the Chrysanthemum meat pie should be covered with cellophane. Then it should be left to rise for twenty minutes.
  7. After this, the baked goods must be brushed with beaten egg and placed in the oven preheated to 180 degrees. Cooking time: 40 minutes.
  8. Now the Chrysanthemum meat pie needs to be greased with melted butter. After this, the baked goods should be covered with a towel and set aside for fifteen minutes. There is no need to melt the butter on purpose. You can simply pick it up with a fork and run it over the hot baking surface, and it will quickly melt.

The pie is ready! If you still have the filling and ready-made dough, then you can make yeast pies with meat from the products. They will turn out very fluffy and tasty.

Other filling

You can add other ingredients to the Chrysanthemum pie with minced meat. For example, white cabbage. Due to it, minced meat becomes more aromatic and juicy.

It's logical to start by kneading the dough. It is prepared using the sponge method. Since there are no eggs in it, but vegetable oil, the pie will turn out soft and will not go stale for a long time. The dough can be made with both water and milk. Warm the liquid slightly. The ideal temperature for yeast to work is 35-38 degrees. That is, the milk should be moderately hot. A finger dipped into it will feel a strong, but not burning, heat. Add yeast and sugar to milk. Sift 3-5 tbsp. l. wheat flour (take it from the total amount). Stir until the mass becomes more or less homogeneous. This is the dough. Cover it with film or a towel and place it in a warm, draft-free place to ripen. Usually the yeast begins to “play” after 10-15 minutes. I sometimes put a bowl in the slow cooker and turn on the "Yogurt" mode. It is great for speeding up the fermentation process.

Instead of dry yeast, you can use “live” yeast to prepare Chrysanthemum. You will need about 20-25 g of them. Finely crumble them before adding them to the milk. Otherwise, the process of making the pie is no different from the one proposed.

Meat or sweet pie Chrysanthemum with its beautiful flower form can brighten up any harsh day, be it a frosty winter or the heavy rains of summer.

The alluring aroma of this delicacy will lift your spirits, and the extremely pleasant-tasting dough and filling will help you and your loved ones appreciate the beauty of the dessert.

In the list below I will present you with the recipe (as well as its variations, for example: sweet or Chrysanthemum pie with minced meat and cheese, step-by-step recipe with photos and videos).

The pie can be made using either puff pastry or yeast dough - the choice is yours, but in any case, the cute pastries will be fluffy and extremely satisfying due to the cheese and added minced meat.

By the way, this pie goes well with any vegetable salads and can be eaten for breakfast and lunch.

It might seem that the pie is difficult to prepare because of its unusual shape: it consists of many “petals” that can fall apart, especially during slicing?

I hasten to dispel doubts! There is no need to doubt the “strength”, since each particle fuses well with the rest. A great light snack for work or school.

Well, now let's get down to the main thing - I'll tell you how to make a step-by-step recipe in the oven.

Composition of Chrysanthemum pie with meat and cheese

For the test I will need: 125 milliliters of selected milk; 125 milliliters of good kefir; 7 grams of yeast; 1 piece chicken egg; 1 tablespoon regular sugar; 1 teaspoon salt, or sprinkle to taste; refined/vegetable oil 6 tablespoons; up to 500 grams of wheat flour. The pie filling consists of: up to 500 grams of ground beef or chicken; 1 head of good onion and 1 clove of garlic; up to 130 grams of any cheese of your choice; salt/pepper - to taste.

What do you use to top the cheese pie at the end? 1 piece of chicken egg yolk and literally 1 tablespoon of water.

Let's get started! How to cook Chrysanthemum meat pie, step-by-step recipe:

  1. In a saucepan with a thick bottom, I heat the milk not to a boil, then add sugar and dry yeast. Leave on fire and stir for up to 5 minutes.
  2. Afterwards, I pour in vegetable oil, kefir, break a chicken egg, add salt - mix it all thoroughly.
  3. Without stopping shaking, I gradually add wheat flour that has been passed through a sieve in advance. When the homogeneous mass begins to gradually thicken, you can proceed to kneading the dough with your own hands. The dough should be soft, chewy and sticky. Pour it in very carefully, do not rush to use it all at once, but, as they say, you need to “look at the situation.” The dough should not stick to your hands (otherwise increase the amount of flour).
  4. I make a ball shape from the base, wrap it in cling film and leave it for an hour in a warm and not ventilated place.

Chrysanthemum pie with meat: step-by-step algorithm for creating the filling:

  1. To begin, I grate any selected cheese coarsely.
  2. Pie with minced beef or chicken, so I mix it, already cooked minced meat, with finely chopped onion and pressed garlic. Of course, don’t forget to add salt and pepper.

Final touches - chrysanthemum meat pie, recipe with photos step by step:

  1. While I was making the filling, the dough should have risen. Then I knead it and divide it into two approximately equal parts.
  2. I roll out one and the other half with a rolling pin into a layer, the thickness of which should be about 3 millimeters. On it I cut out circles (either myself, or using an inverted glass or a special mold) with a diameter of up to 8 centimeters.
  3. In each circle I put a teaspoon of minced meat mixed with spices and carefully distribute it over the entire area, but leaving space around the edges. Sprinkle some cheese on top.
  4. I first fold the resulting meat circle in half, and then glue the edges together so that a hole is formed inside.
  5. I do this with all the circles I receive. When it’s ready, you can move on to preparing the flower shape: I connect each “petal” with another by pinching the opposite corners. Already looks like a flower, doesn't it?
  6. For baking you will need a mold with a diameter of at least 28 centimeters. I grease it with butter so that nothing sticks or burns, and put the future meat pie in it. I leave it there for 30 minutes - let it separate.
  7. After the time has passed, you should brush the pie with mixed egg yolk and water. 8 I bake in the oven for up to 40 minutes at 180 degrees.

And now, the chrysanthemum meat pie with minced meat, a step-by-step recipe with photos, is ready! All that remains is to cool and... Bon appetit! You can see more details in the video below.

Sweet flower cake

This is a very tasty pie recipe with step-by-step photos, which you can prepare quite quickly and treat your friends and family.

For the pie I will need: 125 milliliters of selected milk; 125 milliliters of good kefir; 7 grams of yeast; 1 piece chicken egg; 1 tablespoon regular sugar; 1 teaspoon salt, or sprinkle to taste; refined/vegetable oil 6 tablespoons; up to 500 grams of wheat flour; 140 grams of dry poppy seeds; 40 grams of regular sugar.

How to make sweet poppy seed pie:

  1. Yeast dough can be prepared by looking at the previous list. In the meantime, I'll start making the pie filling.
  2. First, the poppy seeds must be poured with boiling water so that they swell properly.
  3. Then I mix them thoroughly with sugar and leave to cool. By the way, you can easily buy ready-made poppy seed filling without bothering.
  4. Next I divide the dough into two not quite equal pieces.
  5. I roll out ⅔ of the part with a rolling pin and cover the layer with some part of the poppy seed filling.
  6. I do the same with the remaining dough.
  7. I roll both layers with filling into a roll and cut into segments ⅔ width.
  8. I turn the resulting segments in the opposite direction, and pinch the ends of the roll together.
  9. I do the same with a smaller roll.
  10. I place the smaller “flower” on top of the larger one, and now you have an almost finished delicious pie.
  11. I brush the semi-finished product with beaten egg and bake for up to 30 minutes at 180°C.

Done and bon appetit! More clearly presented in the video below.

Apple flower pie

The preparation time for this dessert is 2 hours, and the servings will be for as many as 8 people. Baked goods should be stored at room temperature.

For the dough and filling I will take the following ingredients:

500 grams of wheat flour; 250 milliliters of kefir; 2 tablespoons regular sugar; 1 teaspoon salt; 2 teaspoons of dry yeast for the dough base; 1 piece chicken egg; 5 tablespoons of sunflower oil; 2 pieces of good apples of any/any variety.

For external topping: up to 4 tablespoons regular sugar; up to 2 teaspoons ground cinnamon; 2 tablespoons of powdered sugar.

Let's start creating:

  1. The dessert is made on the basis of yeast dough, so, of course, I’ll start with that. First, I’ll heat the kefir and mix half of it with the yeast itself, granulated sugar and a couple of tablespoons of flour. Mix well and leave to rise for some time.
  2. I mix the second half with sunflower oil and egg. I shake it with a whisk.
  3. I combine the two masses, add salt and gradually add the wheat flour sifted through a sieve.
  4. It's time to knead the dough. It should not stick to your hands, otherwise you should add a little more flour.
  5. Cover with a cotton cloth (you can also wrap it in cling film) and leave in a warm, dry place for up to 25 minutes.
  6. After the time has passed, I divide the dough into 3-4 parts, rolling each part with a rolling pin to a thickness of no more than 5 millimeters.
  7. Using an inverted glass or a special mold, I cut out circles on each layer of dough.
  8. Next, I cut the apples into thin slices so that later they can be bent without any problems. I place each slice on one half of the circle and cover it with the other half on top.
  9. I connect the ends of the folded dough with an apple slice.
  10. I roll the remaining dough (scraps) together, then roll it out again, but this time to the size of the baking dish.
  11. I grease the mold itself with odorless vegetable oil and place the layer there.
  12. I distribute apples along the bottom, which I then sprinkle with cinnamon and granulated sugar.
  13. The final touch: starting from the edges, I lay out “petals” along the edges of the mold, which I also sprinkle with a mixture of cinnamon sugar mixture.
  14. I send the semi-finished product to bake for up to 50 minutes at 180 degrees. Once cooked, you can sprinkle with sweet powder if desired.

The flower cake is ready, bon appetit! For a better look, watch the video below.

My video recipe

The “Chrysanthemum” pie looks like a real work of art: a lush flower with a large number of petals, so carefully molded and laid out, makes you want not to violate its integrity and beauty. A pie can become a worthy decoration for a holiday table or amaze your family during a traditional evening tea party, but for this it will require full dedication and a lot of free time.

For the most obvious sweet tooth and lovers of baked goods, the Chrysanthemum pie with jam and fresh berries is suitable, which after cooking can be sprinkled with powdered sugar and cinnamon or decorated with grated chocolate.

Ingredients:

  • Dry yeast – 10 g
  • Wheat flour – 450 g
  • Buttermilk or kefir – 200 ml
  • Chicken egg – 1 pc.
  • Brown sugar – 2 tbsp.
  • Granulated sugar – 1 tsp.
  • Salt - a pinch
  • Jam – 220 g
  • Fresh berries – 140 g

Preparation:

  1. Dry yeast must be given the opportunity to rise and rise, so it is carefully poured into warm kefir (50-100 ml), granulated sugar is added there, and the container is covered with a lid.
  2. Flour is poured into another bowl (metal or glass) and a funnel is made in it, into which the egg is broken. Followed by a pinch of salt and the rest of the kefir. The dough is kneaded quickly with beating movements. In 20 minutes. Approached yeast is poured into it and brown sugar is poured. The mass is thoroughly mixed again, the bowl is covered with film and placed in a warm, closed oven for 2 hours.
  3. When the specified time is up, you need to knead the dough with your hands and put it in the oven again, but for 1 hour. After the end of the period, the entire volume of the dough is divided into several parts, each rolled into a thin (4 mm) cake, cut into circles with an arbitrary diameter. It is recommended to work with parts one at a time, leaving the non-working ones in the oven so as not to dry out.
  4. Each circle is coated with a thin layer of jam on top, and some fresh or thawed berries are added to the middle. The circles are folded in half twice to form quarters with the sharp ends pinched at the bottom. They are distributed into a baking dish greased with vegetable oil from the outer circle to the inner one.
  5. It is recommended to bake the sweet Chrysanthemum pie in the same way as the meat pie: in an oven preheated to 180 degrees for 45-50 minutes, after which it is advisable to leave it for another 10 minutes. in the switched off oven, and only then remove and place under a towel. During the entire baking process, the oven must not be opened so that the dough does not fall off.

Traditional meat pie “Chrysanthemum”: recipe with photo

The whole difficulty of creating “Chrysanthemum” lies not so much in kneading the dough - here we use classic unleavened yeast - but in manually assembling each “petal” and placing it in its place. Otherwise, perhaps, working with this pie cannot be called particularly labor-intensive, but you will need 0.5-1 hour of immediate free time, and in addition to that, 3-4 hours will be spent on proofing the dough, and about 1 more hour on baking the finished product.

Ingredients:

  • Wheat flour – 0.5 kg
  • Live yeast – 17 g
  • Chicken egg – 2 pcs.
  • Milk – 250 ml
  • Sugar – 1 tsp.
  • Salt – 1 tsp.
  • Butter – 25 g
  • Minced meat – 400 g
  • Onions – 1 pc.
  • Soft cheese – 80 g
  • Warm water – 75 ml

Preparation:

  1. Initially, you need to prepare the dough - mash the live yeast with a fork, combine with 100 ml of warm milk and sugar, stir carefully so that the components dissolve as much as possible, leave under the lid in a warm place. An oven preheated to 50 degrees and turned off is ideal for this.
  2. In a large bowl, break 1 egg, add salt, and beat. Little by little the remaining milk and wheat flour are mixed in. It is better to stir the dough with a wooden spatula, do it quickly and not for long, so that it does not clog.
  3. After 10-15 minutes. pour the dough into the same bowl. Working with live yeast in the case of a “light” dough, as here, is possible without this waiting time, but it will contribute to greater fluffiness and tenderness of the cake. You also need to knead the dough with yeast quickly, but carefully. Then it is covered, wrapped in a towel and put back in the oven.
  4. While the dough is rising, you need to start stuffing. If you have it ready-made, just mix it with chopped onion, egg white (leave the yolk) and warm water, as well as spices, if needed.
  5. When the dough rises, and this will happen in 1-1.5 hours, not earlier, it is kneaded and the entire volume is divided into several parts: each of them is laid out on a wooden surface, rolled in flour and rolled out. You will need to cut small circles up to 5 mm thick from the dough. Their size depends on the desired number of petals: the smaller the circles, the more parts the flower will have.
  6. A small amount of minced meat is laid out on each circle (layer - 5-7 mm), grated cheese is scattered on top. The circle is folded in half so that the minced meat is “enclosed” in the center and the dough is on top. Then it is folded again, but along a short transverse line, matching the sharp corners. They need to be pressed together to secure it.
  7. It is recommended to take a detachable baking pan; for a given volume of dough, it is advisable to keep the diameter within 30 cm. It is lined with parchment, which must be treated with butter. The formed “petals” are laid out in a circle, moving from the periphery to the center. If you start “stepping” from the center, the integrity of the cake will be broken: each wide side of the front petal should lie on its connected corners, slightly pressing and sticking to them.
  8. While the oven is preheating to 170 degrees, the surface of the pie is brushed with beaten egg yolk. The cake must be baked for 40 minutes. at medium level, then the temperature rises to 180 degrees, and the product is ready for another 10-15 minutes.

Pie “Chrysanthemum” with minced meat and apples on yeast-free dough

No less attractive is the Chrysanthemum pie, made from yeast-free dough. And to add flavor to the filling, in addition to the minced meat, you should add sour apples or prunes. The main thing is that this pie is prepared much faster than the traditional version, which means it is also suitable for unexpected guests.

Today I have for you a chrysanthemum pie with minced meat, which turns out very tasty, soft and aromatic. Some people are used to eating only sweet pies, but I assure you that meat pies are no worse, and perhaps you will even like them better.

This pie is prepared using kefir with minced meat, but milk and many other ingredients are also added. I add dry yeast, but you can also use fresh pressed yeast, in which case you will need about 10 grams.

I make the recipe for minced meat pie in the oven from several types of meat, and you can choose one or also mix what you like, such as pork, beef and chicken. To make it even more delicious, I also add grated hard cheese. It doesn’t matter what kind of cheese you choose, just take what you like.

The step-by-step recipe for chrysanthemum pie with meat is not complicated and understandable, which means you can easily bake such a delicious dish for your family. Also see how easy it is to prepare. It can also be made with chicken or pork, depending on your preference.

  • Wheat flour – 350 – 400 g

How to cook a meat pie in the oven

First of all, I make the dough for a meat pie with kefir. To do this, sift 350 grams of flour into a deep bowl. Then I put dry yeast, sugar and 3 tablespoons of flour in another deep bowl. I warm the milk slightly, to about 37 degrees, and pour it into a bowl with the yeast. Then I carefully mix the dough with a whisk.

I put the dough in a warm place for 15 - 20 minutes. To do this, I use a warm electric kettle or a saucepan with not very hot water and covered with an inverted lid, put the dough on top and cover it with a napkin or kitchen towel. If the yeast is fresh, then it will rise with a beautiful fluffy cap. Also on the window, in the sun, the dough grows quickly.

In a bowl with the sifted flour that remains, I put salt, stir, then pour in the dough, lukewarm kefir and a scrambled egg.

I knead the soft dough, and during the kneading process I add odorless vegetable oil. I also lubricate my hands with this oil to make the dough easier to knead and not to fill it with too much flour. Considering that flour can be different in quality and moisture content, therefore its quantity must be determined based on the dough. If there is not enough flour, it is better to add it a little while kneading. A well-kneaded dough should be soft, pliable and not stick to your hands.

I cover the meat pie dough with a towel and put it in a warm place for an hour until it rises.

While it is rising, I prepare the meat filling for the pie. To do this, put minced meat, onion grated on a coarse grater, cream, chopped parsley in a bowl, squeeze out the garlic, add salt, ground black pepper, ground coriander and knead everything well. If the minced meat is dry, I advise you to add a little more water or cream. I also grate Gouda cheese into a separate bowl for the filling.

Now back to the test. Lightly dust the work surface with flour. I lay out the risen dough, lightly dust it with flour, knead it several times with folding movements, form a roller and divide it into 3 parts.

I roll one part into a layer 3 mm thick, then cut out circles with a glass, while I dip the edge of the glass in flour so that it does not stick. My glass has a diameter of 7.5 cm.

I put a teaspoon of minced meat on each circle and sprinkle with cheese.

Now I form a petal, for this I fold the circle with the filling in half.

Then in half again, blinding the ends, I stretch the workpiece a little with a petal.

So I cut circles out of all the dough and form petals. I got 27 petals and from a small piece of dough I also molded the middle. I rolled out a thin strip 2 cm wide, folded it in half lengthwise and made cuts along the fold line along the entire length, then rolled it into a roll and the middle came out for Chrysanthemum.

The most difficult part of the kefir meat pie recipe is behind us, now I start putting the petals in the mold. Therefore, I take a round baking dish, my mold diameter is 24 cm, grease the sides of the mold with odorless vegetable oil, and cover the bottom with parchment. I first lay out the petals along the side of the pan in a circle, then I make a circle of petals with a smaller diameter and another last circle of three petals; I place the center of the pie, twisted from dough, in the center of the pie.

I cover the pie with a kitchen towel and leave it warm for 20 minutes. Meanwhile, I preheat the oven to 180 degrees. When the oven has warmed up and the cake has risen, I grease it with a mixture of yolk and water.

Then I put the minced meat pie in the oven to bake for 30 - 35 minutes. Grease the finished pie while still hot with butter, cover and let it cool.

Chrysanthemum pie is very beautiful and very tasty. It combines soft, tender dough and juicy meat filling. This pie will perfectly decorate the holiday table.

To make cooking easier, kneading the dough can be entrusted to a bread machine or other dough mixer, which will greatly simplify the work. And even children can cut out circles and arrange the filling; together it will be more fun. This is such a delicious chrysanthemum meat pie with minced meat and cheese. I advise you to bake it too. Bon appetit!
