I’ll say right away that I’ve never tried a softer, airier and more porous cottage cheese cake! The Japanese "cotton cheesecake" (or "cotton cheesecake") is a soufflé cheesecake. Such a popular and simple recipe, of course, I really want to repeat!
My impressions of this cake are very good (with a few reservations). Its texture is truly beyond praise: soft, silky, delicate. The taste didn’t disappoint either: moderately sweet, unobtrusive, with subtle notes of cream cheese and white chocolate. But the appearance, of course... Soufflé baking is generally capricious, and my first “cake” came out slanted, crooked, cracked and sagging. But in the original recipe, the perfectly made-up and ideally dressed Ochikeron with her ideal Japanese-speaking oven produces a perfectly smooth cake, not slanted, not crooked, with a flat top, not sagging, not sagging, not burnt or cracked! Well, okay, we weren’t in the ballet, there’s no point in starting. But I decided to post the recipe anyway, especially since the second time it turned out to be more acceptable in appearance, and the Chief Taster really liked it.
Ingredients
[In the original recipe, the cake is very small, designed for a mold with a diameter of only 15 cm. Rarely does anyone have such a mold, so I also give double proportions, which are very suitable for molds with a diameter of 21-23 cm. 240 g white chocolate (120 g white chocolate)
240 g cream cheese (120 g cream cheese)

We separate the eggs into whites and yolks. We put the whites in the refrigerator.

For a water bath, select a saucepan and bowl that are suitable in size to each other. The bowl should hang on the sides of the pan, its bottom should not touch the water, and there should be no cracks around the bowl from which steam escapes. (White chocolate is very finicky to melt and tends to "curdle," so don't try to melt it in the microwave and be careful even when using a water bath.)

Break the white chocolate into small pieces and place in a bowl. Bring the water in the pan to a boil and reduce the heat to the lowest setting. Place the bowl of chocolate on a pan of water.

Stirring constantly, melt the chocolate.

Add softened cream cheese at room temperature to the chocolate, mix well and remove from heat.

Add egg yolks to the chocolate and cheese mixture and mix well.

Beat the egg whites with a mixer until stiff peaks form.

Add one third of the whites to the chocolate mixture and mix well.

Gently fold the remaining whites into the dough with a spatula, moving in a circle and from bottom to top.

Line the bottom of a springform cake pan with oiled baking paper. We also form high “sides” for the cake from the same paper.

Transfer the cheese mixture into the mold. Level the top. Tap the mold on the surface of the table to get rid of any voids in the dough.

Place the form with the dough in a larger form. Pour hot water into the bottom of the larger mold so that it reaches half the height of the mold.

Place this design in a preheated oven at 160 C (320 F) for about 45 minutes. (The original recipe had a different temperature and time setting, but it didn't work for me.) The cheesecake is ready when the center looks firm and not "jelly-like." Turn off the oven and remove both pans from the oven. Return the cheesecake to the oven only in a small form, without a water bath, and cool in the cooling oven.

There are many types of pastry creams for desserts. The most common are custard, protein, curd, sour cream, butter, cream and cheese. Cottage cheese, processed cream cheeses and whey-based Ricotta cheese are not used for production. Condensed milk with sugar in recipes uses classic and boiled milk, made according to GOST.

Cheese cream is well cooled before use.

Classic recipe

Ingredients:

  • Philadelphia - 500 gr.;
  • Condensed milk - 200-300 gr.

Preparation:

  1. Add all the cheese to the bowl and mash it with a fork. Pour in 200 gr. condensed milk
  2. Beat with a mixer and add more milk until the mixture becomes snow-white and fluffy.

Recipe with cream

Cream adds a rich milky flavor to the cheese cream, which goes perfectly with the cheese, and vanilla extract adds a wonderful aroma.

Ingredients:

  • Philadelphia - 500 gr.;
  • Classic condensed milk - 1 can;
  • Cream 33% fat - 1.5 cups;
  • Vanilla extract - ½ tsp.

Preparation:

  1. Add all ingredients except cream and vanilla extract to a bowl. Beat until fluffy for a few minutes.
  2. In a separate bowl, whip the cream. In order for the cream to whip quickly, the product itself, the whisk and the dishes must be cold. Whip the cream at maximum speed and, as soon as the mass begins to hold its shape, turn off the mixer.
  3. Add vanilla extract and prepared cream to the mixture and beat for a few more minutes. Do not beat for too long; as soon as the mixture begins to hold its shape, the cheese cream is ready.

With lemon juice

Lemon juice adds a tartness that perfectly complements the cheesy and milky flavor of the mixture.

Ingredients:

  • Philadelphia - 500 gr.;
  • Classic condensed milk - ½ cup;
  • Vanilla extract - 1 tsp;
  • Lemon juice - 2 tbsp.

Preparation:

  1. Add all prepared ingredients to a bowl.
