  4. Advice: Try adding a clove of garlic pressed through a press to mayonnaise. The cake will become more fragrant. It is worth considering that not everyone likes the taste of mayonnaise with garlic.
  5. To reduce the calorie content of the dish, make a cake with sour cream. Instead of mayonnaise, add the same amount of sour cream to the saute before the end, simmer over low heat for 3-5 minutes. The cake will have a delicate creamy flavor.

If you don't have the time or desire to bother with baking liver pancakes, try baking a liver cake in the oven. This version of liver preparation is also called royal liver. 4. Remove the pan from the oven. Let the cake cool and only then remove it from the mold. Decorate with mayonnaise mesh or colorful vegetables and herbs at your discretion.
  5. Advice: Liver cake can also be prepared with cheese. You can put a layer of grated hard cheese on top of the sautéed carrots and onions.

Pork liver has a specific bitter taste. To correct this deficiency, you need to soak the liver in milk for 1-2 hours before cooking. In the same way, you can soften the taste of the liver of an older animal. By the way, when purchasing a liver, pay attention to its color. The lighter the liver, the better the quality of the product. Pork liver liver cake turns out to be very tasty, as pickles and spicy pickled mushrooms perfectly mask the minor imperfections of pork liver.

Recipe ingredients:

for pancakes:

  • pork liver 800 g.
  • milk 250 ml.
  • onion 2 pcs.
  • eggs 3 pcs.
  • flour 3 tbsp. spoons
  • salt pepper
  • vegetable oil

For filling:

  • pickles 3 pcs.
  • marinated mushrooms 100 g.
  • mayonnaise 200 g.
  • bunch of parsley

Cooking method:

  1. Wash the liver, clean it of bile ducts and films, soak it in milk. Scroll the liver through a meat grinder along with the onion. Add beaten eggs, flour, salt and pepper. Bake thin pancakes in a preheated frying pan greased with vegetable oil.
  2. Cut the pickled cucumbers into small cubes. If the skin of the cucumbers is thick, cut it off. Slice the mushrooms into thin slices. Chop the greens.
  3. Place the liver pancake on a dish, grease it with mayonnaise, put a layer of pickles, add some herbs. Next is another liver pancake, mayonnaise, a layer of mushrooms and greens. Alternate the cucumber and mushroom filling until you have assembled the entire cake. Cover the cake with mayonnaise. Decorate with greens.
  4. Advice: Instead of pickled mushrooms, you can use fresh champignons fried in vegetable oil.
  5. Another original solution, a layer of regular pancakes or a thin omelet. The taste of liver cake with pancakes is softer, neutral, dietary and interesting. Bake pancakes according to the usual recipe. To make egg pancakes, stir an egg with a little milk and ½ tablespoon flour. Bake and turn over carefully; the omelet pancake will tear easily.
Not every housewife succeeds in making a liver cake the first time. The problem is the pancakes, which can burn and tear. And the liver itself can taste bitter, have an unpleasant aftertaste, and become tough during cooking. • Choose only fresh, not frozen liver.
  • Before grinding the liver, clean it of films and vessels.
  • The liver will not taste bitter if you soak it in milk for 1-2 hours. Pork and beef liver should be soaked.
  • Oatmeal added to the minced meat will help make the liver cake airy.
  • The liver cakes will be soft and will not tear if you do not spare the eggs. For half a kilogram of liver you need to take 3 eggs.
  • The cake is made from different fillings. The most common are mushroom, carrot, hard cheese filling with garlic and mayonnaise. Don't be afraid to experiment. You will get a completely unusual taste if you mix different fillings in one cake.
  • If cooking large pancakes still scares you, prepare small pancakes and make portioned mini-cakes from 3-4 pancakes, layering them with filling.

Beef liver has particular benefits. 100g can fully compensate the body’s daily need for vitamins A, C, D, E, K, group B. In addition to the known fact about the high content of ferum, the liver is rich in potassium, calcium, magnesium, copper, sodium, selenium, phosphorus, zinc.

The product often becomes a seed of discord in families with small children: it is impossible to persuade them to eat a piece of meat rich in iron and other macroelements. But if you give the hated product the appearance of a dessert, the kids will probably decide to try the yummy food.

The appetizer is prepared according to the principle of a cake: there are pancakes and a cream dressing.

It is impossible to remember who suggested preparing such a cold appetizer and how it was born. It is credited with Soviet origin. Limited in ingredients, but trying to make the menu varied, the chefs of restaurants and canteens fantasized and came up with new combinations of well-known products. All the best liver cake recipes with photos are collected in.

Liver cake: classic recipe

The most popular step-by-step recipe liver cake incredibly easy to make and contains a minimum number of ingredients. The cakes are baked in a hot frying pan. The liver is washed well, films and veins are removed. The pieces are passed through a meat grinder with a fine mesh. The result is a mushy, homogeneous mixture. Add flour, milk in equal proportions, a couple of eggs, a little soda slaked with vinegar, and spices. The last component, vegetable oil, will prevent the pancakes from sticking to the pan. Fry over medium heat with a small amount of heated oil in a frying pan, fry on both sides.

The preparation of the cream in this recipe is extremely simple: add 1-2 cloves of garlic, passed through a press, to the mayonnaise. When the cakes are ready and slightly cooled, you can start assembling the snack. Lightly coat a plate with cream and place pancakes on top, alternating them with mayonnaise dressing. The top cake must be decorated. For this use:
. grated hard cheese;
. processed cheese;
. egg,
. greenery,
. fried carrots.

A flower made from a boiled egg or cucumbers located in the center looks elegant. The liver goes perfectly with a juicy vegetable; you can simply place cucumbers cut into thin slices on the top layer.

Liver cake without bitterness

The specificity of the liver is an unpleasant bitterness. The degree of bitterness depends on the correct processing of the fresh ingredient. Often, when cutting up a carcass, the bile ruptures and ends up on the liver. The toxic liquid of the life process instantly spoils the taste of the product. The close proximity of meat to the digestive organ leads to the appearance of an unpleasant taste, which manifests itself when the ingredient is improperly prepared. This is especially true for pork liver. For the pie, a mixture of several varieties is most often used:
. chicken;
. pork;
. beef

The ratio of pork liver to other varieties should be at least 60/40. It is beneficial to use it for snacks: it is half the price of other varieties. Beef and chicken have a softer, porous structure, and the degree of bitterness is lower. Chicken liver, when properly cooked, develops a sweetish taste.

Particular attention should be paid to the purification process of the raw product. Removing veins and film is a mandatory step. This ensures the mixture is homogeneous. When baking, unnecessary components will be very noticeable, and the pancake may not rise. Compensate for this moment by adding soda or baking powder. The advantage remains with the latter, since the powder has no aftertaste.

Melting tenderness

Taste liver cake depends on the softness, airiness, and thinness of the pancakes. It is the cakes that determine how tasty the finished product will be. The step-by-step recipe for Soviet-era liver cake uses flour, but this is far from the only bulk material that can be added to pancakes. Top 3 ingredients for the dough:
. flour;
. buckwheat;
. semolina;
. rice.

There are a huge variety of dishes made from buckwheat; it is known that it goes well with liver. But the most important thing: you can make flour from the kernels. Unlike its wheat counterpart, buckwheat flour in combination with ground liver, milk and baking powder gives a delicious, delicate taste. Disadvantage: high cost, limited distribution. Making buckwheat flour at home is difficult; you need a high-quality and powerful coffee grinder.

Semolina is an excellent substitute for flour; it is added to make the snack more fluffy. The product combines well and reacts with milk. The mixture of liver, semolina and milk should be left for 20-30 minutes so that the components react with each other and the semolina swells. Otherwise the technology is the same. You need to add the remaining ingredients to the present mixture, mix, and fry in a frying pan.

The recipe for making rice pie involves adding semi-finished, boiled cereal to ground minced liver. Everything is mixed to a homogeneous consistency. The pancakes turn out thicker, with an interesting taste, and more filling.

With flour, step-by-step recipes for liver cake with photos are the most common. The ingredient can be considered classic. Important tip: sift the flour, add in small portions last. You can immediately combine the flour with baking powder.

Filling for liver cake

The fat content, calorie content, and taste of the dish depend on the ingredients used for the filling. Traditionally this is:
. mayonnaise;
. egg;
. cheese;
. sour cream;
. dressing with vegetables.

The largest group, diverse in its composition, is, of course, vegetables. We offer the top 5 vegetables that can become the basis for filling the snack.

1. Carrot
This is the real leader of this group of vegetables. Carrots go perfectly with liver, so the choice is obvious. The root vegetable needs to be washed, peeled, grated on a coarse grater and fried in butter.

2. Onion
Fried onion cubes are most often added to carrots, but there are recipes for liver cake with photos where onions act alone as a filling.

3. Leeks
It tastes significantly different from onion, so it can be safely separated into a separate group. It is cut into rings and laid out in the same way, pouring dressing on top. Unlike its relative, it does not add bitterness to the cake.

4. Mushrooms
Champignons are used. In the step-by-step recipe for liver cake, fry the onion until golden brown, add sliced mushrooms. After they release the juice, add grated carrots. The mixture must be simmered for another 5-7 minutes over medium heat.

5. Pumpkin
Pumpkin occupies a special place on the list. The vegetable is specific, and adding it to the liver seems like an extremely unusual solution. In fact, the vegetable perfectly complements the meat and adds sweetness to the cake. The peculiarity of preparing a snack with pumpkin is that it is added to both the cakes and the cream. For the cakes, the ratio of boiled chopped pumpkin and raw ground liver will be 1 to 5. For the cream you will need pumpkin poached in vegetable oil, as well as garlic, cottage cheese, sour cream, and onions. The advantage of this recipe is the complete absence of mayonnaise. This snack is a godsend for mothers who teach their children to eat healthy. Pumpkin fried with onions is seasoned with dairy products, garlic is passed through a press.

The fastest way to make pie cream is to use sour cream or mayonnaise. Garlic, herbs, and mustard are added to the base. Filling options with eggs, cheese, processed cheese suggest using sauce for a more homogeneous mass.

Liver cake in a slow cooker

The classic recipe for liver cake with photo is cakes cooked in a frying pan. Depending on the base, you can make them thinner or denser. For those who prefer to cook quickly, a pie cooked in the oven or slow cooker will be a godsend.

The preparation of such a snack is very different from the usual form. To prepare an airy and delicious liver cake you will need:
1. Liver (beef or pork) - 500g;
2. Eggs - 2 large;
3. Onions (onion) - 2 pcs, medium size;
4. Sour cream (cream/milk) - 50ml;
5. Rice - 250ml (half cooked);
6. Carrots - 1 piece (large);
7. Semolina - 2 tablespoons.
8. Vegetable oil, salt, pepper

Cooking begins with preparing the vegetables. Onions and carrots are peeled and washed. The onion is cut into small cubes, the carrots are chopped on a coarse grater. Vegetables need to be combined and fried. If you use a multicooker for cooking, then set the time in the “Baking” mode to 10 minutes. The process can also be done in a frying pan. While the vegetables are arriving, prepare the liver: wash, remove all excess, cut into cubes for further grinding. You can use a meat grinder or blender. Add milk, eggs, semolina to the viscous mixture. The mixture needs to sit with the semolina (up to half an hour). If you replace semolina with flour (the same 2-3 tablespoons), the components do not need to “rest”. Rice is added to the total mass, mixed with vegetables.

Grease the multicooker bowl or oven dish generously with vegetable oil. The mixture is poured into a container, the temperature is set:
. for a multicooker: “Baking” 60 minutes;
. for the oven: 180-160°, 30-40 minutes of cooking.

Turning the snack over is quite difficult, so you can avoid this manipulation. Turn the cake over 10 minutes before the end of the baking process.
